That depends on how much flash you have - if you only have 2MB of flash
you probably have to stick with JFFS due to the minimum number of
5 eraseblocks in current JFFS2.

JFFS2 - that is.

Edit the ptablespec file and change jffs to jffs2.
and do 'make files images'
